The speciality of Bresse is undisputably the famous Bresse
chicken.
In 1957, in order to protect the reputation
of the poultry, Bresse inhabitants make vote for a law of "Appellation dOrigine
Controlée" quality seal. Nowadays it is the only poultry all over the world owing an
AOC . One million chickens are sold in Bresse every year.
It is characterised by its white feathers, its blue legs, its red comb and its thin skin.
The Bresse chicken is bred in the open air on grassland with at least 10 m² each one.
After 3 weeks, it is fed only with corn and milk products. It is slaughtered at least 4
months old after having spent 10/15 days in darkness in a special wood box called
"épinette". Every year, in mid-december, the "Four Glorieuses"
sublime this exceptional poultry. These traditional fine poultrys competitions are
one of the most prestigious display of a know-how unique all over the world.
The Brotherhood of "Poulardiers"
aims to protect and makes the promotion of the Bresse Chicken.
The CIVB (Inter-professional Comity of Bresse Poultry) helps the breeders and makes the
promotion too. |
